Sky Restaurant Concepts, the locally owned group known for Squid Ink Sushi and Highball Cocktail Bar, is bringing a new dining experience to Peoria this fall.
The new restaurant, Sparrow, will officially open its doors on Saturday, September 20, 2025, at the Trailhead development on the northeast corner of 83rd Avenue and Happy Valley Road.
Sparrow will feature an “American Eclectic” menu designed to please a wide range of palates. Guests can look forward to fresh seafood, pan-roasted chicken, prime steak, crisp salads, and oysters, all crafted with the creative touch Sky Restaurant Concepts is known for.
As one of the anchor restaurants of the Trailhead project, Sparrow is expected to become a new hotspot in Peoria for everything from casual nights out to special celebrations.
